Tokyo Discipline. Sydney Omakase.
Seasonal sushi and omakase shaped by precision, restraint, and time.
An intimate counter experience in Haymarket, where every piece is prepared with intention.
Sushi Restaurant & Omakase in Sydney
At Sushi Sei, sushi begins long before the fish reaches the counter.
Through careful selection, precise handling, and Japanese preparation techniques such as Tsumoto-shiki, each fish is prepared to bring out cleaner flavour, deeper umami, and a more refined texture.
Guided by Tokyo discipline and shaped through Sydney expression, Sushi Sei offers an intimate counter experience where every course is intentional.
